Meet The Chef

Collin Brown was the first Caribbean chef to be awarded the prestigious AA Rosette Award for excellence for his fine dining restaurant in Canary Wharf. The sophisticated, upmarket restaurant with a laid-back vibe and funky, fashionable décor was a popular haunt for Londoners and celebrities alike. He has catered parties for Katy Perry, Beyoncé, the Crown Prince of Saudi Arabia and America's best known dynasty - the Rockefellers. Moreover his self-titled brand to the Trident Castle which is the only Castle in the Caribbean and the historic White Witch Restaurant in Montego Bay - complete with a cookery school to inspire the next generation of Jamaican chefs. Having earned the position of being one of the most high-profile Jamaican chefs in the UK, Collin continues to maintain interests in the UK, focusing on joint ventures to keep his presence alive. Collin also collaborated on the menu of the Jamaican Patty Co. - which brings authentic, straight from the oven, to London's Covent Garden. An advocate of fresh ingredients and fresh cooked food, Collin consulted at length on the authentic menu to give UK consumers the opportunity to enjoy a fresh flavour of Jamaica Direct to your dining table.
